It all began in 1981 when Ian, a South African raised in Zimbabwe, decided to leave his role as an army captain after Robert Mugabe came to power and eventually moved to Mareeba.
At the Skybury Plantation, varieties of Bourbon and Catuai Arabica coffee are cultivated.
Exclusive wet processing and a highly sophisticated technological structure allow for the “shaping” of the flavor of this coffee.
The structure is the perfect combination of speed and control, allowing the coffee to be washed and dried in just one hour (usually it takes 72 hours).
Leaving a small amount of mucilage on the beans, interrupting the fermentation process, followed by high-speed washing, ensures that each bean retains its flavor and organoleptic characteristics even more.
